This one started at the farmers market. 

I love fresh produce. It's not just that it tastes better, it's because it is beautiful. The colors of are amazing! 

The Corrales Grower's Market is back up and going. Corrale's, my home town is so cool. There are the most eccentric people and they all get together in this super earthy way. 

The Wednesday market is super small, but I kind of like it like that. All the growers get the chance to talk to you about the produce, where their farm is and a little more about it. With more people comes less time for chatting. Small is nice. 

This last Wednesday I brought my kiddos to the market. They tried things right there from the growers and chimed in about what they would like. I love exposing them to this healthier lifestyle. I hope these outings are something that sticks with them in thier lives.

Mckenna, my super picky 8 year old tried peaches and guess what? She loved them! Yay for having something healthy she is down for!

Health Benefits

Peaches are chock-full of all sorts of goodness. Tons of vitamin C, E and K, niacin, folate, iron, choline, potassium, magnesium, phosphorus, manganese, zinc, and copper.

"Another Study from Texas A&M showed that peaches and plum extracts were effective in killing even the most aggressive types of breast cancer cells and did not harm normal healthy cells in the process. ... "As an excellent source of the strong antioxidant vitamin C, peaches can also help combat the formation of free radicals known to cause cancer. While an adequate vitamin C intake is necessary and very beneficial as an antioxidant, the amount necessary to consume for treatment purposes for cancer is thought to be beyond oral intake. Baked Peach Chicken and Green Beans

Baked Peach Chicken Ingredients

  • One clove of garlic
  • One leek finely sliced
  • One large peach diced Finley
  • 3 Small Packs or 4 1/2 pounds natural chicken thighs
  • 1/8 teaspoon Himalayan sea salt
  • 1/8 teaspoon black ground pepper corns
  • Less than 1/8 teaspoon/ a light dusting of ground ginger
  • 1/4 cup water
  • 1/4 cup grass fed butter or ghee


Preheat oven to 450°. In a Dutch oven on medium high heat melt the butter and brown the leek and garlic. Add the peaches and spices. Let cook for about one minute. Add 1 cup water.  Turn down the heat to a simmer and cover with the lid. Let simmer for about 10 minutes. In the meantime cut chicken thighs into about 4 x 4" pieces. It will not be perfect but reasonably the same size. Add the chicken to the peach sauce in the dutch oven. Place the Dutch oven in the oven and let it cook at 400° for 1 hour. Season with pink Himalayan sea salt to your preference. 


Green Beans Ingredients

  • 1/8 cup Grass fed butter or ghee
  • One garlic clove
  • 1 slice of leek
  • 1/2 cup water
  • 4 cups fresh green beans
  • Pink Himalayan Sea Salt

Green Beans Instructions

In a large sauce pan brown the butter or ghee with the leek and garlic over medium heat. Once browned add the water and bring to a simmer. Add the green beans. Cover and let simmer for about 20 minutes stirring occasionally until green beans are slightly soft and color has turned a darker green. Season with pink Himalayan sea salt to your preference.
